Elleserri (Kerala Pumpkin Mash) Vegetarian


Elleserri

Ingredients

Pumpkin (cut into large cubes)
Tumeric powder
Chilli powder
grated coconut
cumin
salt

Cooking Method
  1. Add pumpkin, tumeric powder, chiili powder and a little salt in a pot with water and boil till pumpkin is soft
  2. Mash the pumpkin
  3. Blend grated coconut, cumin
  4. Add this to the pumpkin and continue to cook just a short while
  5. Remove from stove
  6. Temper in hot oil: mustard seed, curry leaves and grated coconut
  7. Pour over the pumpkin mix and cover
